As the temperature drops and leaves scatter the ground, now’s the time that the world gets consumed by the vast majority of pumpkin-spice-everything. With this being said, here are some fall-inspired sweet treats to make.
Pumpkin Cream Cheese Muffins
Instead of stopping by Starbucks everyday and spending a good $3.95 on this pastry, here is a simple recipe to save money and have a one week supply.
What you will need:
- All purpose (AP) flour (2 cups)
- Baking soda (¾ tsp)
- Baking powder (¾ tsp)
- Salt (¾ tsp)
- Vegetable oil (½ cup)
- Eggs (2 large eggs)
- Brown sugar (½ cup)
- Regular white sugar (1 cup)
- vanilla extract (1 tsp)
- pumpkin puree (half-a-can)
- cinnamon (1 tbsp)
- Nutmeg (½ teaspoon)
- a muffin tin
- Ice cream scoop
- cupcake liners
How to assemble the cream cheese filling:
What you will need:
- One block of cream cheese
- Piping bag
- Sugar (4 tbsp)
- Vanilla extract (1 tbsp)
In a medium-sized bowl, beat together cream cheese and sugar. Then, add in a vanilla extract to taste. After this, add in cream cheese filling into a piping bag and let it chill in the refrigerator while assembling the muffins.
Pumpkin Muffins:
In a medium bowl, add in all purpose flour,baking powder, baking soda, and salt. Then, add nutmeg and cinnamon.
In a separate bowl, combine pumpkin puree, large eggs, oil, sugar, brown sugar, and vanilla. Then, mix in all wet ingredients together and then fold it in with your dry ingredients.
Baking process:
Before putting it in the oven, scoop your batter with an ice cream scoop, into a muffin tin with liners. After this, pipe in your cream cheese filling directly in the middle of your muffins. Then after this, put it in the oven at 350 degrees for 20 minutes.
Pumpkin cream cold foam:
Spice up and flavor your plain cup of coffee with a fun and festive cold foam topping to settle in within the fall season.
What you need:
- Heavy whipping cream (1 cup)
- Pumpkin pie spice (a dash)
- Vanilla extract (¼ tbsp)
- Pumpkin spice syrup (½ tsp)
How to assemble:
In a bowl, or mason jar to save the remainder of the cold foam, add in a cup of heavy whipping cream, then add in a dash of pumpkin pie spice for a burst of flavor. Then, add vanilla extract into your heavy cream mixture and pumpkin spice syrup.
Then, with a frother, or with a whisk if you don’t own one, mix up all of the ingredients until it turns into a frothy, yet, bubbly texture. (don’t mix it too much or else it’ll end up looking like whipped cream.
Brown Butter Snickerdoodle Cookies:
A soft, chewy, tangy and comforting cookie with a burst of cinnamon flavor that fills the room with a fall-like aroma.
What you need:
- Cream of tartar (1 ½ tsp)
- Butter (1 cup browned)
- AP flour (2 ½ cups)
- baking powder (½ tsp)
- baking soda (½ tsp)
- brown sugar (½ cup)
- Sugar (1 cup)
- Salt (1 tbsp)
- Vanilla extract (1 tsp)
- 2 large eggs
Cinnamon sugar mixture for cookies:
What you will need:
- Sugar (¼ cup)
- Cinnamon (1 tablespoon)
- Nutmeg (½ tablespoon)
In a small bowl combine sugar, cinnamon and nutmeg. Mix all together and set aside.
How to assemble:
In a sauce pan, add in a stick of butter and let it melt until it turns into a brown color. After this, pour it into a medium bowl and then combine sugar, and brown sugar. Then add large eggs and vanilla extract, then whisk it all together until it turns into a creamy texture.
In a separate bowl, gather flour, baking soda, baking powder, salt and cream of tartar. Whisk it all together, then add in your wet ingredients.
Baking process:
With an ice cream scoop, scoop the dough and roll it into balls each scoop. After this, roll your cookie dough into your cinnamon sugar mixture. Then, put your cookie dough into a sheet pan and let it bake for 10-15 minutes.
Warm Apple Cider
Take your store bought, or even hand-picked apples to an extent by turning it into a warm (or even cold) apple cider.
What you need:
- 10 Granny smith apples
- 10 Honey crisp apples
- 5 Gala apples
- Cinnamon sticks
- 5 Oranges
- Water
- Brown sugar (2 ½ cups)
- Cloves (1 tbsp)
How to assemble:
In a stock pot, add your apples, oranges and spices, then cover it up with water and let it simmer for a good two hours. After two hours of simmering, use a potato masher and mash up your apples and oranges aside of the stock pot to release more flavor. After mashing them up, add them back to your pot and let it simmer for 30 minutes more.
After letting your mixture simmer, use a strainer and gently pour your cider into a pitcher and make sure to squeeze your fruit in between to release more flavor.
After pouring cider into the pitcher, then add in sugar to sweeten.
